Pizza Time.....

I’ve been experimenting….I’ve made thin crust….thicker crust….cooked the toppings….not cooked the toppings…put a lot of mozzarella….and less mozzarella… pre-baked the dough….and not bothered….

Here is what we like best and which Bobby proclaims, “the best pizza ever!”

I buy my dough at Publix – quick, easy and no complaints ….let it sit out one hour…Using my fists and working around the edge of the dough, in minutes it is circular. I let it rest for about 30 minutes. (While I liked the crispy crust….it hurt my jaw…so….I make a softer, chewier yet gentle crust. If you like a crispy crust, just roll it out and put your toppings on.)

I brush the dough with oil and prick it with a fork as if you were making a pie. I then spoon on some gravy….some mozzarella…the cooked peppers/mushrooms/onions….a little more mozzarella….a little shredded sharp cheddar cheese….and a little more gravy.



Bake in a 350 oven for 30 minutes.....



Ingredients
Gravy
1 medium can Hunts Tomato Sauce
garlic/oil/oregano

Toppings
8 oz Mozzarella diced
1 green pepper diced
1 medium onion diced
1 jar of mushrooms, drained
2 handfuls of Shredded Sharp Cheddar Cheese

Cream of Wheat for the pizza stone

Knitting continues on Cobblestone....up to sleeve #1.....

Halfway There....



I wanted to call this post, "Omar the Tentmaker" because seriously....I am knitting a lot of fabric! The yarn is a little hard on my hands....and there are a few tension issues between the garter stitch and the stockinette sections that I hope will block out. Other than that....an endless knit : )

For some reason, I cannot get an accurate color photo of the sweater...it is more of a burgundy/wine color....

Recipe for Success........

No knitting content....but....Cobblestone is now ~12". Here's a recipe instead!

Scalloped Potatoes
Béchamel Sauce
4 tbsp flour
4 tbsp butter
4 cups whole milk

5 lbs white potatoes
2 onions diced

Melt butter. Add flour. Whisk and cook about 2 minutes. Slowly add whole milk. Whisking continually, bring to a simmer/light boil. When it is the consistency of “cooking” pudding, or coats the back of a wooden spoon, it is done. (It takes a while since I don’t scald the milk separately.) I’m all about less clean-up.

Meanwhile, peel and slice the potatoes.

Do a layer of potatoes, sprinkle some diced onion, salt and pepper. Top with béchamel sauce. (Cover all the potatoes with dollops). Repeat.

Bake in a 350 oven for 90 minutes or until the top is brown and golden.

For the longest time, I made scalloped potatoes “perfect every time.” And then something happened. The sauce would separate and become watery. It was the potatoes. Make sure you buy potatoes that are specifically for scalloped potatoes – I think I bought white potatoes. Who knew? I do now : )

That's Entertainment!



I started Bob's Cobblestone sweater this morning....lots of angst-free knitting.....



Here's a fuzzy picture of the first skein of Susan's Spinning Bunny alpaca/merino/silk in the "Clematis" colorway. I neglected to write down the yardage....sigh....

The Sweater........

After a lot of agonizing, pinning and spritzing….I decided to wet block the sweater after all. My swatch blocked beautifully so I am hoping the sweater does as well!




I still have to knit the belt….and have one ball left to do it with. I can now safely assume that the Debbie Bliss site is correct when it listed the yarn requirements as 13 balls….because that is exactly what I will have used!

It’s a good thing I always order too much yarn!

The Hottest State....

Heidi woke me up at 3:45. I made coffee....turned on O'Reilly and read my emails. At 5:00, I called Bobby to make sure he was up for school....and at 5:06....the power went out.



Since I couldn't put Ruffles out....she's blind...it was dark....I wouldn't be able to see to save her....while I was calling Progress Energy, she left me wonderful presents in the kitchen. It's fun mopping the floor at 5:20 a.m. Ah...the scent of PineSol in the morning...............



It was at that point I decided to have the Breakfast of Champions.....



and spin.....



Missy Sof was the only perfect person in the house.....Power was supposed to be restored at 8:00....it came on exactly 2 hours after it went out. I'm thinking rolling blackouts for power consumption.

I hate this state....and the heat...........
